Ingredients
Filling
- 8 large, fresh peaches, peeled, pitted and sliced into 1/4 inch wedges
- 1/4 cup Country Sweet Sauce, mild
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoons fresh lemon juice
- 1/8 teaspoon ground nutmeg
- 1 teaspoon cornstarch
Crust
- 1 cup all-purpose flour
- 2 Tablespoons light brown sugar
- 1/2 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 6 Tablespoons unsalted butter, chilled and diced
- Up to 1/4 cup boiling water
- 1 Tablespoon white sugar
Directions
- Preheat oven to 425 degrees.
- In a large bowl, combine filling ingredients. Toss well to cover completely. Pour into a buttered, 2-quart baking dish. Bake 10 minutes to soften peaches and remove. Reduce oven to 350.
- Meanwhile, blend together flour, brown sugar, cinnamon, baking powder and salt in a mixing bowl. Cut in butter with pastry blender or fork until mixture resembles coarse meal. Stir in just enough water until dough combines together.
- Spoon dough onto peaches spacing evenly. Sprinkle with 1 Tablespoon white sugar. Bake about 25-30 minutes or until topping is golden brown.
- Serve warm with ice cream or whipped cream.
